NU6 Idea 4: Organic Tocino

Tocino (Spanish for "bacon") is a Capampangan specialty widely known in the country and is now being exported in the West to as far as the Middle East. In the Philippines, it is typically made from pork belly, sliced into thin strips. Anise wine, annatto, water, salt, sugar, and salt are combined in a container. Each strip is then sprinkled with the mixture and stacked in a separate container, which is covered and kept refrigerated for about three days to cure.The idea here is to keep the traditional preparation but using organic ingredients, including "happy pigs", all grown and raised in strictly organic nurseries, gardens and farms. As the conventional tocino has been criticized for its use of refined sugar and preservatives, however minimal, the Organic Tocino shall use organic sweetener and will only be initially on limited production for sale in the mornings and only to be cooked immediately within the day. 4This may be pricey than the regular tocino but it is intended only for a niche market.
